1 tbsp unsalted butter
1/2 cup chopped pecans
1 tbsp brown sugar
1 tbsp shredded coconut

How Do I Make Sweet Potato Pecan Pudding?

Here is how you make Sweet Potato Pecan Pudding:

Prick the skins of the potatoes and bake them at 400 degrees for about an hour or until they are soft and baked through.While the potatoes are baking, melt the butter in a heavy saute pan over medium-high heat. Add the chopped pecans and toast for 5 minutes, stirring frequently to avoid burning them. Remove from the pan.When the potatoes are done, slit the tops and scoop out the insides and transfer them to a medium mixing bowl. (You may want to let them cool somewhat to make them easier to handle if you don't have a good oven glove.)While the potatoes are still hot, mash them and stir in the pecans, brown sugar, and coconut. Add salt and pepper to taste.Serving Size:?Makes 4 servings
