1 1/2 cups vegetable stock or water
1 pound extra-firm tofu, cut into 1-inch chunks
1 cup pineapple chunks (fresh or canned)
1 cup unsweetened coconut milk

Add the cardamom, coriander, turmeric, cumin, cinnamon, and 1 tablespoon of the oil and process to form a paste. Blend in the water.
