In a large pot, boil potatoes in 8 cups of water seasoned with the bouillon cubes & Adobo poultry seasoning for 30 minutes. When finished, drain potatoes, saving 1.5 cups of broth. Saute' garlic and oregano in 2 tbsp. of broth using same large pot. Add potatoes back into pot and smash. Add remaining broth. Mix in feta cheese. Add more salt & pepper to taste, if desired.
