Makes about 8, 4 oz servings. Preheat Oven to 350. Saute onions til soft (about 5 min) add garlic and coook until fragrant. Remove from heat, set aside. Combine Ketchup, BBQ sauce, brown sugar and vinegar in a bowl, set aside. Combine Onion Soup mix & eggs, mix into meat. Add sauteed onions and parsley. Add half bbq sauce mixture. Pour onto foil lined baking pan and form into a loaf. Place in oven and cook for 45 minutes, basting with the rest of bbq sauce mixture after 20 minutes.Meanwhile, cut up potatoes into 4 sections and bring to a boil in a pan with 4 garlic cloves; let simmer until tender and mashable. Drain. Melt butter and pour into potatoes; mash with potatoes and garlic. Add chicken base and sour cream. Season w/salt & pepper. During last 10 minutes of baking, top meatloaf w/mashed potatoes and Pepperjack cheese until melted.
