Here is how you make Perfect Mashed Potatoes:

Place the potatoes, parsnips and garlic in a large saucepan and fill with cool water. Cover, bring to boil, then simmer for 20 minutes, until the vegetables can be easily pierced with a fork. Turn off the heat and carefully drain the vegetables using a colander. Return them to the pan and turn the heat to medium. Allow the vegetables to dry out, which should take about a minute. Remove from the heat and stir in the pepper, thyme and sour cream. Mash the mixture using a fork or potato masher to your desired consistency. Serve warm.
