The ingredients for Mom's Meat and Potatoes are:

1 cup yellow onion, diced
2 cloves garlic, minced
1 lb lean ground beef (94% or above)
2 cups white potato, diced
1 can diced tomato, with liquid
1/4 cup canned (or frozen) sweet corn
2 tbsp olive oil
2 tsp cumin
1 tsp red pepper flakes
2 tsp mexican seasoning ( chili powder)
salt and pepper to taste



How Do I Make Mom's Meat and Potatoes?

Here is how you make Mom's Meat and Potatoes:

Sauté onions in olive oil till translucent. Then add garlic and continue to sauté till just browned, being careful not to burn the garlic. Add the meat and cook till nice and browned. Add the other ingredients, (the canned tomato, potato, corn and seasoning).Once mixed make sure there is enough liquid to cover the meat and potato if not add water till the meat is covered, stir. Cover and simmer on medium-low heat for 35 minutes or till the potatoes are cooked through. Serve over rice or by itself with a tortilla!
