1 lb spaghetti squash
1 medium onion, chopped
as much garlic as you can stand
2 cups mushrooms, chopped
3 tbsp black olives (I prefer greek kalamata olives)
2 roma tomatoes, coarsely chopped
1 pkg frozen artichoke hearts
1 red bell pepper, coarsely chopped
1 can red kidney beans, drained and rinsed
any other fresh vegetables you can find in your crisper


How Do I Make Zucca Puttanesca?

Here is how you make Zucca Puttanesca:

Preheat your oven to 350F. Cut the spaghetti squash in half and remove the seeds Place the squash cut side down on an oiled cookie sheet and put it in your preheated oven for about 30 minutes or until soft. (While the squash is roasting is a great time to roast an acorn squash for a yummy soup or some sweet potatoes or roast cauliflower. You can also use this time to root around in the fridge for any long forgotten veggies that would be great in the pasta)While the squash is roasting, chop all the vegetables to your preference. Heat a non stick skillet on medium heat and saute the garlic and onion until soft. Add in the harder vegetables and anything frozen. This includes the bell pepper and artichokes. Once these have started to warm up, usually about 5 minutes or so, add in the softer vegetables like the tomatoes and mushrooms. Cook for about 5 minutes. Turning to your cooling spaghetti squash, use a fork to pull the strands of warm roasted spaghetti squash out and place them in a large bowl. Going back to your skillet, add the chopped basil, black olives, and kidney beans. As soon as the basil is limp and the beans are warm, mix with the squash noodles. Serve warm.
