Whole Peeled Canned Tomatoes, 2 large cans
Onions, raw,2 cups chopped
Anchovy flat , 2 can (2 oz) drained and rinsed
Garlic, 3 Tbsp minced
Capers, I jar
Kalamatta, or Green Olives, pitted- 16 jumbo
Extra Virgin Olive Oil, 2 tbsp
Basil, Oregano, Thyme for each 2 tbsp
Bay Leaf, one or two whole to taste
Crushed Red pepper 1 tbsp or to taste


How Do I Make Puttanesca?

Here is how you make Puttanesca:

In a large open skillet (a Paella Pan works well) saute onions in oil until translucent, add garlic saute another 3 minutes. Add spices. Pour a 1/4 cup liquid from the tomatoes. Quarter whole tomatoes right out of can into the pan. Cook about 5 minutes. You want the pieces of tomato to be large and hot but not overcooked. Add the capers, crushed red pepper, olives. Simmer another 3 minutes. Pour into large warmed serving dish. Spoon over pasta. May add grated parmesan cheese, but that will increase fat.
