Here is how you make Tamie's Summer Kickin' Quinoa:

Preheat oven to 400.Wash and slice zucchini and squash. Cover a cookie sheet with foil and spray with non-stick spray. Lay the zucchini and squash on the foil, brush with olive oil and spinkle Mrs. Dash Seasoning. Set aside. When quinoa begins to boil, add to oven. Bake 15 minutes or until lightly brown.Combine water/broth, onion powder and quinoa in saucepan. Bring to boil, cover and simmer until done - about 15 minutes. The quinoa will start to spiral. During the last 2 minutes of cooking, stir in the craisins and spinach. Stir in the parmesean.
