1 med onion, diced
3 cloves garlic, minced
2 Tbsp fresh ground ginger
low sodium veggie broth
1 sweet potato, diced
2 carrots, diced
1/2 roasted butternut squash, diced
zest and juice of one orange
one bunch kale, destemmed and finely chopped
3 cloves garlic, minced
1-2 cup cooked quinoa or rice
chopped cilantro
shredded coconut (optional)

Here is how you make Orange Mash Up over Greens and Quinoa:

Saute onion and garlic in small amount of broth until translucent. Add ginger, sweet potato and carrots. Saute until tender, adding broth just to cover veggies. Add squash, orange zest and juice and cook a few more minutes. Mash up, leaving chunks.Saute kale or other greens and garlic in broth, just until bright green. Spread greens on serving dish, top with desired grain and orange mash, cilantro and coconut if desired.
