Here is how you make Mick's Ratatouille:

Put olive oil into large skillet on med-high heat. Add minced garlic, onion and shredded carrots. Cook for couple minutes so flavor in infused in oil. Add celery and zucchini and cooked for approx. 8-10 minutes till celery and zucchini start to soften, stirring frequently. Add in tomatoes and parsley, and Italian Seasoning. Season with Creole seasoning to taste.
