Assemble in a large jelly roll pan. First spread a thin layer of olive oil on bottom of pan. Lay eggplant slices on first. Then squash, onions, and peppers. Sprinkle crushed garlic over everything. Sprinkle corn and pine nuts over all. Sprinkle 1/4 teaspoon oregano and pepper over all the vegetables. Drizzle remaining olive oil over vegetables. Pour both cans of tomatoes over all vegetables evenly distributing them. Cover pan lightly with foil. Bake for 60 minutes in 400 degree oven. Serve with couscous.
