2-1/2 C Apple cider vinegar
1 C Asparagus, fresh, cut into small pieces
1 tsp Lemon juice
1/2 C Cashews, chopped
Salt & pepper to taste
(I use Garlic Pepper & Everglades seasoning instead of regular salt)

Here is how you make Brown Rice Surprise:

Heat olive oil in a medium saucepan over medium heat, stir in onion & garlic. Cook about 2 min or until tender & translucent.Stir in rice & cook for 5 min. (Stir rice constantly so it won't stick)Pour in apple cider vinegar. Season with salt & pepper. Bring mixture to a boil, cover, & reduce heat to a simmer for 45min or until rice is tender & liquid is absorbed.Place asparagus & lemon juice in a separate medium saucepan with enough water to cover.
