Here is how you make Barley Brown Rice Pilaf:

Rinse barley and put in a pan with 4 cups cold water. Bring to a boil. Cover and simmer for 1 hour. Drain and rinse in cold water. Refrigerate in an air tight container (this can be done ahead of time).Put brown rice in 3 quart saucepan with broth and 1 cup water. Bring to a boil, add salt. Cover and simmer on low for about 30 minutes.In a small saute pan, saute onion, garlic carrot and mushrooms in Extra Virgin Olive Oil until soft.
