I put "vegetarian" because there is no meat, but I'm not vegetarian and this has cheese in it so it probably isn't really vegetarian. It would be easy to modify to make it vegetarian though! This recipe is modified from a recipe found on allrecipes.com (Refried Bean Enchiladas). I used the La Preferida brand of mexican products because it had the lowest sodium of the brands at the store. Enjoy!

1 cups Fat Free Refried Beans
.75 cups instant brown rice
10 taco sized Flour Tortillas
2 cans (4 oz each) mild diced Green Chiles
1.5 cups Reduced Fat Mexican Four Cheese blend
.5 cup chopped onion
.5 small chopped green pepper
2 tbsp olive oil
3 1/2 teaspoon all purpose flour
1 tbsp chili powder
.5 tbsp garlic powder
1.5 cup water
1 tsp cider vinegar


How Do I Make Cheesy Bean and Rice Enchiladas?

Here is how you make Cheesy Bean and Rice Enchiladas:

Make the rice according to directions on package, Mix rice, beans, cottage cheese, green chilis, and one cup mexican blend cheese in a large bowl, set aside. Saute the onion and green pepper in 1 tbsp olive oil in a small sauce pan and add to the bean/rice mixture.For the sauce, in a large sauce pan whisk together oil, flour, chili powder, and garlic powder until smooth. Gradually stir in the water and vinegar. Bring to a boil, cook and stir for 2 minutes until thickened, and remove from heat.To make the enchiladas: Dip both sides of each tortilla in the sauce. Place about 1/2-3/4 cup of bean mixture down the center of each tortilla. Roll and place seam down in a 13x9 baking dish coated with non-stick cooking spray. Pour remaining sauce over top and cover with remaining cheese blend and some chopped green onions if desired. Bake covered at 350 for 20-25 minutes until heated through. Makes 5 2-enchilada servings.
