-1 15-oz. can Goya Red Beans in Sauce
-1 tbsp. olive oil
-1 medium yellow onion, diced
-3 cloves garlic, minced
-1/2 green pepper, diced
-1/2 red pepper, diced
-1 tbsp. cumin
-1 tbsp. smoked paprika
-1 tsp. cayenne pepper
-1 tsp. Better than Bouillon vegetable base, dissolved in 1 c. water


How Do I Make Spicy Mexican Rice and Bean Casserole?

Here is how you make Spicy Mexican Rice and Bean Casserole:

-Preheat oven to 400F.-Boil 2.5 c. water over high heat. When boiling, add rice, cover and simmer for 20 minutes.-While rice is simmering, heat 1 tbsp. olive oil in non-stick pan over medium heat.-Saute onion until nearly translucent.-Add garlic and peppers to the pan, and saute until peppers are nearly fork-tender.-Add cumin, cayenne and smoked paprika to veggie pan and saute until veggies are coated.-When rice is done simmering, add to veggie pan and toss to combine. Add bouillon and stir to combine.-Pour rice and veggie mixture into greased casserole dish.
