2 cups water
2 cans beans, drained and rinsed
2 cups raw spinach

Here is how you make Vegetable Bean and Rice Casserole:

Heat olive oil in a dutch oven or large saucepan. Saute onion until softened. Add garlic, bell pepper, and carrots. Continue to saute for another 5 minutes. Stir in rice and seasonings and mix well.Add water, tomatoes, and beans. Mix well, cover and bring to a boil.
