On another stove burner, Heat oil in skillet. Mince garlic cloves and simmer for 1-2 minutes until fragrant. Meanwhile, chop turkey sausage into bite size pieces trying not to lose too much of the sauce/fat. (Alternatively, you can boil the sausage in a separate pot if you want most of the fat to drain out). Simmer sausage with garlic in skillet. Wait 3-4 minutes until sausage is mostly cooked , then add chopped onion. Stir until onion softens and sausage cooks through. Add tomato paste, cajun seasoning and sugar (if the tomato paste is very tart). stir until the tomato paste reduces and flavors simmer. Add the can of red beans and simmer on low-medium heat. (If you want your sauce to thicken some, crush a few of the red beans once they soften, and mix into the sauce.
