Weekday Black Beans and Rice

Ingredients:
1 T. olive oil
1 lb. andouille sausage or other smoked sausage, cut into bite-sized chunks
2 ribs celery, chopped
1 large onion, chopped
2 cloves garlic, minced
2 cans, 14 ? oz. each, black beans, drained & rinsed
1 can each (14 ? oz.) beef and chicken stock
1 t. thyme
? t. red pepper flakes
1 T. Cajun seasoning
1 bay leaf
? t. salt
? t. oregano
Freshly ground black pepper
1 ? t. dried cilantro or 3 T. fresh, chopped
3 green onions, sliced
Cooked rice


How Do I Make Weekday Black Beans and Rice?

Here is how you make Weekday Black Beans and Rice:

Directions: Heat oil in a Dutch oven over medium heat. Add sausage & cook until just beginning to brown. Add celery and onion. Cook until softened, about 3 minutes. Add garlic & cook 1 minute more. Stir in beans, stock, thyme, red pepper flakes, Cajun seasoning, bay leaf, salt, oregano and black pepper to taste. Increase heat to medium-high; heat just to a boil. Reduce heat & simmer for 20 minutes. Stir in cilantro and green onion. Serve over rice. Serving Size:?Serves 6.
