1 T. olive oil
1 cup thick-and-chunky style salsa
2 T. packed brown sugar
1 T. reduced-sodium soy sauce
2 cloves garlic, minced
1 cup slivered red bell pepper
1 cup slivered green bell pepper
1 Roma tomato, chopped
1 large onion, cut into chunky pieces
1/3 c. chopped fresh cilantro
2 T. fresh lime juice
salt and pepper to taste
2 c. cooked brown rice


How Do I Make Sweet and Spicy Beef over Rice?

Here is how you make Sweet and Spicy Beef over Rice:

Heat olive oil in Dutch oven or similar heavy pot with lid. Brown beef in batches, pouring off drippings, and return all beef to the pan. Add salsa, brown sugar, soy sauce, garlic, and onion, cover tightly and simmer for 1-3/4 to 2-1/4 hours or until beef is tender. Check occasionally and add a bit of water if liquid is cooking off - you want juices for the beef to simmer in! Once the beef is cooked to desired tenderness, add slivered bell peppers and cook for about 10 minutes more, or just to soften peppers. Just before serving, stir in cilantro, lime juice and chopped tomato. Season with salt and pepper to taste. Serve over hot brown rice.
