1 can condensed 98% fat-free cream of mushroom soup
2 boxes frozen spinach, thawed & drained
1 1/2 cups brown rice, cooked
1 tsp Italian seasoning
1/2 tsp pepper
1 cup diced cooked ham
3/4 cup shredded reduced-fat Cheddar cheese
1/4 cup grated Parmesan cheese

Here is how you make Spinach Rice Casserole:

Heat oven to 350 degrees F. Spray 13 x 9 inch baking dish or pan with cooking spray.In a 3 quart saucepan over medium heat saute carrot, celery, onion & garlic with water until soft, stirring occassionally. Add 1 3/4 cup water and cream of mushroom soup to carrot, celery, onion & garlic mixture. Stir in ham, 1/4 cup of Cheddar cheese and the Parmesan cheese. Cook 30 to 35 min. or until bubbly.
