1 Tbsp olive oil1 medium onion, diced2 medim sized stalks of celery, diced3/4 cup long grain brown rice1/2 tsp sea salt1/2 tsp cracked black peppercorns1 (10-oz) can Campbell's 98% Fat Free Cream of Celery Soup1-1/2 cups vegetable stock1 (14-oz) can black beans, drained & rinsed1 jalapeno pepper, finely chopped1 (4.5-oz) can mild green chiles, chopped2 cups RF shredded cheddar cheese

Here is how you make Brown Rice and Beans with Cheese and Chilies:

In a skillet, heat oil over medium heat.  Add onion and celery and cook, stirring, until softened, about 5 minutes.  Add rice, salt and peppercorns ad cook, stirring, for 1 minute.  Add soup and stock and stir until smooth.  Stir in beans and transfer to slow cooker.To preserve the texture of the rice, place 2 clean tea towels, each folded in half (wo you will have 4 layers) over the top of the stoneware to absorb the accumulated moisture.  Cover and cook on low for 8 hours or on high for 4 hours, until hot and bubbling.Remove tea towels.  Add jalapeno pepper, green chiles and cheese.  Cover and cook on high for 20-30 more minutes, until the cheese is melted.Number of Servings: 6Recipe submitted by SparkPeople user CHRSTINAG.
