Salt
1 Tbs olive oil
1/4 cup chopped shallots (2-3 shallots)
1 cup washed and chopped swiss chard, tightly packed
1/12 cups cooked brown rice
1 Tbs soy sauce
2 Tbs oven roasted pine nuts
1 Tbs chopped fresh oregano, or 1 tsp dried
1/2 cup gated soy veggie shreds (cheddar flavor)

Here is how you make Tomatoes stuffed with Swiss Chard, Rice and Cheese:

1. Preheat oven to 350 degrees2. Cut a 1/2 inch slice from the top of each tomato. Scoop out the seeds and pulp, leaving the shell in tact. Sprinkle the inside of the tomatoes with salt and turn upside down on a roasting rack to drain while preparing the stuffing.3. Heat a skillet over high heat for 1 minute. Add the oil and shallots, reduce heat to low. Saute until the shallots are soft, 2-3 minutes. Add the chard and saute until wilted, 2-3 minutes more. Add the rice, soy sauce, pine nuts, and oregano. Remove from the heat.4. Stuff tomatoes, and place in shallow roasting pan with a little space between them.5. Bake uncovered until the tomatoes are cooked through, 10-12 minutes. Remove tomatoes from oven and turn oven to broil. Sprinkle cheese over the tops of tomatoes and broil until cheese melts.
