Heat the vegetables in a frying pan and add the can of tomatoes. Allow the veggies to cook throughly. Place the rice in a large bowl and add half of the cheese. Place the cooked vegetables on the rice and cheese and top with the rest of the cheese. You can add any meat to this if you want.
