1/2 cup - 1 cup frozen veggies
1 Haddock fillet, boneless skinless(I use frozen)
2-3 TBSP Curry Powder
1 tsp garlic powder
pinch of salt
pinch of pepper
1/2 tsp paprika
1/2 tsp ground cumin
water


How Do I Make Haddock Rice Curry?

Here is how you make Haddock Rice Curry:

Cook brown rice. Add spices into the water while it is cooking *NOTE: If you're using leftover rice, just add the spices and stir*When rice is almost cooked, add veggies and turn off heat. In a medium baking dish, add the rice and veggies and enough water to keep the rice moist while it bakes. Place fish on top of the rice and top with a sprinkle of curry powder. Bake at 350F for 30 minutes, check to see if fish is done. If if is not done, cook at 400 for 10 more minutes. Let sit for a few minutes then serve!This is great as a side dish that can serve a family of 4-6 people, or as a main meal and serve 2-3 people.
