1 can Maesri Masaman Curry Paste
2 cinnamon sticks
1/2 TBL kosher salt
1/3 - 1/2 cup raw cashews
4 bay leaves
2 cups brown rice
1-2 cups vegetable broth
5-6 pinches cardamom
2 TBL tamarind (optional)


How Do I Make Masaman Curry with Tofu and Brown Rice?

Here is how you make Masaman Curry with Tofu and Brown Rice:

Slice tofu block into ~1 inch cubes.Sprinkle lightly with salt and bake on a greased cookie sheet about 20 minutes (check frequently)Peel and cut up sweet potatoes into 1x1x1 chunks.In a large skillet or pot, sauteed onion in about 1 TBL olive oil until soft.Add coconut milk and curry paste and heat on medium, stirring constantly to break up the curry.When curry paste is mixed in, add sweet potato, cashews, and spices.When tofu is done to your liking, add to curry.Simmer curry on low about 30-40 minutes until potatos are tender.While curry is simmering, combine 2 cups brown rice with 4 cups of water and cover.
