In large skillet, heat 1/4 C oil over medium heat. Add garlic & ginger and cook stirring occasionally until crisp & brown. With slotted spoon, transfer to paper towel and salt lightly.2. Reduce heat to medium-low, add 2 T oil and leeks, cook about 10 minutes, stirring occasionally until very tender but not brown. Season lightly with salt.3. Raise heat to medium and add rice.
