Here is how you make Organic Lamb Shoulder Kebobs with Basmatic Rice (Tah-dig):

Rice:In a pot add 2 cups of Organic White Basmati Rice. Fill with water until it reaches slightly above first flexion crease (the first horizontal line on your finger below finger nail above and above knuckle).Add 2 tbsp Vegetable oil and add salt.On Med-High bring rice to a boil and stir. Stir occasionally until water is gone. Turn to Low. Cover with lid. Cook for 20 minutes. In the middle of the pot add 2 tbsp of unsalted butter. Cover and cook for another 25 minutes.Fill sink with approx 3 inches of cold water. Remove pot from stove and immediately put in cold water. (It will steam and make a noise so don't be alarmed). Let pot sit in water for a minute or two.Remove lid and cover with a plate (or serving platter) then flip pot over so rice goes onto the plate. (The crunchy part of the rice is called Tah-dig)Lamb:Season lamb with salt, pepper, and sumac. Add lamb to skewers.
