1 (15.5oz) can black beans, drained and rinsed
2 medium carrots, peeled and grated
3/4 cup tomato puree
1 cup lightly packed cilantro, chopped
1/2 cup chopped green onion
2 tsp kosher salt
2 large eggs, lightly beaten

Here is how you make Curried Lentil Rice Loaf:

1. Preheat oven to 350.2. Line a loaf pan with parchment paper with a 2 inch overhang. Spray parchment with cooking spray.3. In a large non-stick skillet over medium high heat, heat oil.4. Add rice, lentils and curry powder. Cook stirring frequently until rice is lightly toasted, about 3 minutes.5. Add water and bring to a boil. Reduce heat to low and cover. Simmer until rice and lentils are just tender, about 15 minutes. Turn off the heat.6. Stir in the remaining ingredients.7. Pour into the loaf pan and even out with spatula.8. Bake for about 1 hr. Loaf should be golden and firm.9. Place on a wire rack to cool for 10 minutes.10.
