The ingredients for Lentil and Rice Goulash are:

1 pound lentils (dry)
2 cups Uncle Ben's Instant Whole Grain Brown Rice
1 - 14 oz can whole kernel corn
1 can (2 cups) of Swanson chicken broth (99% Fat free and low sodium)
1 - 14 oz can green beans
1 - 14 oz can petite diced tomatoes
3 Tbsp extra light olive oil
Approximately 18 cups of water
1 cube of chicken flavored bullion
Spices to taste (I used celery salt, garlic salt, and oregano)
Salsa to taste (*add the calories if you add this!*)


How Do I Make Lentil and Rice Goulash?

Here is how you make Lentil and Rice Goulash:

Place water in a VERY large pot with the chicken broth, bullion cube and olive oil. Bring to a boil. While you are waiting for the water to boil, rinse and check lentil beans for rocks and what ever doesn't belong. Once the water has come to a boil, add the lentils and lower heat to medium. Start cooking timer for 30 minutes. Add spices. When timer shows that there is around 10-13 minutes left, add the rice to the pot and stir. Add the rest of the veggies. Cook until the timer goes off and check the texture of the beans to see if you want them to be cooked longer or not. If you do want them to be softer, cook for 10-15 more minutes. Watch the amount of water in the pot carefull so that you will not run out of water and the amount of water doesn't turn your goulash into soup (of if you WANT soup, then don't worry about that. :)) After 45 minutes of cooking, it's done.
