Drain, place in saucepan, cover with water by 2 inches, and boil Add 1/2 tsp. salt. Reduce heat, and simmer 30 minutes until just about tender.In another pan, heat 1 tbsp. olive oil and saute chopped onion until it colors. Add sumin seed and cinnamon, stir together, then add rice. (NB: when using brown rice it works best if you cook it first, until almost done, and then add to the pan). Stir.Add 2 cups water and lentils with their liquid, plus 1/4 tsp. salt and pepper to tast. (NB: if using mostly cooked brown rice, add only 1 cup of water). Stir together, boil; reduce heat, cover and cook 20 - 25 minutes until liquid is absorbed. Meanwhile, brown sliced onins in remaining 1 1/2 teaspoons oil.
