1 cup Lentils
1 cup Brown Rice
1 cup chopped onion
1 cup chopped bell peper
1 cup chopped carrot
1 cup chopped zucchini
1 diced clove of garlic
1 pound lean ground turkey
1 tablespoon olive oil
1 tablespoon curry powder
1 tablespoon cumin
4 cups stock (vegetable or chicken)


How Do I Make Lentils and Rice?

Here is how you make Lentils and Rice:

Mix the ground turkey with the cumin and curry. (Other spices can be added at your discretion) Chop all vegetable to bite sized chunks. Saute the onions, peppers, and garlic until nearly tender. Add the bell peppers, carrots, and zucchini. Once tender, add the turkey cook until there is no pink. Add the vegetable stock and lentils. Cover and Cook for approx 15 minutes and add the brown rice. Cover and cook until tender. Add red wine vinegar to taste just before serving. Sprinkle with feta cheese. Recipe makes four generous servings.
