How Do I Make Frank's Mexican Rice?

Here is how you make Frank's Mexican Rice:

Heat up lg 2-4"deep frying pan or gauldetho.( used by PR for cooking rice).Toss in all chopped veggies and cook until semi-cooked.Add wht rice.While browning rice for at least 8-10 minutes,mix in a large measuring cup,4 oz tomato sauce,1 cup water,1-1/2 cups of veggie stock(3 cp total liquid) & seasoning.When their is no moisture in pot/pan or rice is golden toasty brown add the liquid blend & bring to a boil.Stir up mix to loosen up anything stuck to the bottom.Boil for 2 minutes,stir again,place lid over tin foil top to create a tight seal and set on low for 12- 15 minutes.Remove top stir and taste to make sure rice is cooked through.Mix in grn onion tops and cilantro leaves,salt/pepper to taste.Serving Size: 10 Half cup servingsNumber of Servings: 10Recipe submitted by SparkPeople user FRANKGARZA.
