Here is how you make Rice Pilaf with Zereshk and Orange Peel:

Makes 3 1-cup servingsDice onion.Zest the rind of 1 orange. Simmer in hot water, changing 2 or 3 times until sweet. Set zest and a couple of tablespoons of simmering water aside.Rinse barberries in a couple of changes of water. Saute in 1 tbs of butter for 1 minute, add 1 tbs sugar and saute for 1 or 1 additional minutes. Add orange zest and a couple of tbs of simmer liquid. Remove from heat and let stand while rice cooks.Saute diced onion in 2 tbs of butter until translucent, add rice and saute for a couple of minutes. Add 2 cups of chicken stock, bring to simmer, cover and cook until done to taste, adding additional stock if necessary.Mix in barberries and orange rind. Add salt to taste.Rinse barberries.
