1/2 c Basmati Rice raw = about 1 cup cooked
3 tbsp Olive Oil
1 medium Onion chopped fine
2 cloves Garlic
1 tbsp Curry powder (or as much or as little as you would like)
1 tsp Pepper, red or cayenne (or as much or as little as you would like)
1 cup frozen Peas
1 ripe tomatoe skinned, seeded, and chopped
11 oz can garbanzo bean, drained and rinsed
1 1/2 cups fresh white bread crumbs (2 slices of bread in a food processor are about 1 and 1/2 cups)
1 - 2 tbsp fresh Cilantro
1 large egg

How Do I Make Curried rice patties?

Here is how you make Curried rice patties:

*Cook the rice according to the package - set aside and cool. *Heat large skillet with some of the olive oil. Add onions and garlic and cook until it begins to soften. *Add spices - curry powder, chili. cook for 2 minutes *Add peas and tomato (you can also reduce the peas to 4 oz, and add a small leek and a small red bell pepper that is finely chopped) cook gently for 7 minutes until tender. Set aside* Process the garbanzo beans in a food processor until smooth. Add 1/2 of the vegetables and process again. Transfer to a large bowl and add the remaining vegetable mixture, bread crumbs, cilantro and egg; mix will*stir in cooked rice and season well. *chill for 1 hour, then shape into 4 - 6 patties. The patties should be pretty thin. the recipe calls for frying the patties - which would be delicious.. but i just put them in a saute pan with a bit of cooking spray and cook until they were brown on both side and warm all the way through ( since they have egg in them).
