Here is how you make Bahamian Peas 'n' Rice:

Saute onion, salt pork and thyme in canola oil. Add tomatoes and allow to cook for 3 minutes. Add pigeon peas and simmer for 3 minutes. Add coconut milk and simmer for 5 minutes. Add water and bring to a boil. Season with salt. Add rice and allow to boil for about 5 minutes.
