This is a concoction from my kitchen. I just kept throwing things in there. It turned out to be a light healthy and tasty dish. I'm trying to stay away from gluten so I didn't use a tortillas but you could wrap this in one.You can cook up the rice ahead of time or use that Minute Brown Rice to speed this up.

Lime Juice, .squeeze the juice from 1/2 a lime
Cilantro, dried, 2 tbsp
1/2 tsp. Cumin Powder,
Creole Seasoning, Tony Chachere's, 0.25 tsp
Black Pepper, freshly ground, 0.5 tsp
Salt, Redmond All Natural Sea Salt, .25 tsp

Here is how you make Grilled Flounder with Peppers and Brown Rice:

Squeeze lime juice onto fish then coat fish with Creole Seasoning, salt, pepper, Cilantro, cumin, and garlic. Grill for 5 to 7 minutes, flipping once until fish flakes with a fork. Remove fish from grill. Add peppers and onions. Grill for 5 minutes until done. Serve on a 1/2 cup of brown rice per each fillet.
