Here is how you make Moroccan Rice Pilaf:

Chop onions. Heat olive oil in large heavy skillet on medium heat. Cook onions until translucent, but not browned. meanwhile, chop carrots into matchsticks. Add spices, carrots & nuts and toast 2 minutes, stirring constantly. Stir in rice, stirring to coat each grain thoroughly. Add chickpeas, raisins and chicken broth.Cover skillet & reduce heat to low. Cook, stirring occasionally 25-30 minutes, or until liquid is absorbed. Remove from heat & let steam (covered) 10 minutes.
