2 T olive oil
2 stalks celery, chopped
1 large carrot chopped
1 medium onion chopped
4 oz of bacon or sausage, chopped (optional)
2 cloves garlic
salt and pepper to taste
1 cup brown rice
2 cups lentils, rinsed and picked over
2 cups stock (can also do all stock or all water)
2 cups water
3 bay leaves


How Do I Make Lentils and Rice with Pork?

Here is how you make Lentils and Rice with Pork:

In large pan heat olive oil over medium high heat. Add bacon, celery, onions and carrots. Saute until vegetables are tender and bacon is starting to brown. Add garlic, salt and pepper to taste and saute an additional 2 minutes. Add rice, lentils, bay leaves, broth and water and bring to a boil. Reduce heat and cover allowing to boil gently. After 30 minutes check lentils and rice for tenderness. If necessary, add additional water or broth to finish cooking.
