1 1/2 c water
3/4 t salt
2 T vegetable oil
1 T ginger root, peeled and minced
1 leek, cleaned and sliced
1 medium sweet potato, peeled and diced
1/2 T rice vinegar

Here is how you make Black Rice with Sweet Potato and Leek:

Bring the rice, water, and 1/2 t of salt to a boil. Lower the heat, cover, and simmer for 35 minutes. Meanwhile, preheat the oven to 375 and prepare the sweet potato. Place the sweet potato onto a rimmed baking tray as you dice, then drizzle with 1 T oil, sprinkle with remaining salt, and mix on the tray, until the oil is evenly spread. Cover tightly with tin foil and roast for 30 minutes. Meanwhile, prepare the ginger and leek. Heat the oil in a large skillet over medium heat. Add the ginger and leek, and stir constantly, watching to avoid browning. Once the leek is softened, remove from heat and set aside. When the rice is done, stir in the sweet potato, leek, rice vinegar, and pepper. Taste to adjust seasonings. Enjoy!
