2 tbl rice vinegar
1-2 scallions
1/2 brown rice (cooked it makes apporx 1 1/2 cups)

Here is how you make Mirin-glazed Salmon over brown rice:

Cook brown rice per package. Plate on two seperate plates.Mix mirin, sugar, and soy in a dish shallow enough to hold salmon. Marinate salmon for 3 min on the first side and flip marinating for another 2 min on the remaining side. Place the marinated salmon in a hot, dry pan for 2 min and than turn over, add the marinage and cook for another 2 min.Remove Salmon from pan. Place atop brown rice. Turn off burner and add rice vinegar to the hot pan. Let deglaze for approx. 1 min.Pour glaze over the salmon and top with chopped scallions.
