Here is how you make Tilapia with rice and mole sauce:

Preheat oven to 425. I like to put my fish on aluminum foil for easy clean up. Spray foil with olive oil.Place tilapia pink side up. Season lightly with S & PPlace in oven for approximately 15 min. Or until fish flakes easily.In skillet heat 1/2 cup vegetable stock, add onions and cook until tender. Add washed spinach and cook minimally as spinach cooks very fast. Add more stock if needed.Mole Sauce:Heat olive oil in a skillet, saut? garlic, onion, and jalapeno. Add spices till aromatic, brown flour in pan whisking the whole time, add stock and keep whisking to make thick sauce. Add chocolate and simmer stirring constantly to melt chocolate.Place 1/4 spinach mixture and 1/2 cuo rice on each of 4 plates. Place cooked fish on top of spinach.
