Here is how you make Blackeye Peas and Shrimp over Rice:

Start the rice and broth in a rice cooker.Sprinkle spice mix over the shrimp.On a large skillet or dutch oven heat the oil under medium heat. Dice the onion and sweat until they start to caramelize. Add the mushrooms and garlic. Cook until mushrooms release their liquid then add the beans and tomatoes. Simmer over low heat for 10 minutes. A couple minutes prior to the rice being finished add the shrimp and stir. Serve the shrimp and beans over the rice.Makes 4 servings.
