I use shrimp, sometimes scallops, but you can use red meat or poultry or whatever strikes your fancy. Makes 3 servings at least, great to make ahead for lunches for the week!

Here is how you make Brown rice with veggies and shrimp:

Add butter (optional), brown rice, and chicken broth to a saucepan with a tight-fitting lid. Bring to boil, stir once, then replace lid and reduce to simmer. Takes approx. 50 min to cook rice. After 50 min, turn the rice over to check and make sure all the liquid is absorbed. Remove from heat, keep lid on, and let sit on stove while you make the veggies and shrimp.When your rice is done, steam your veggies in the microwave - I add the frozen veggies to a bowl with just enough water to cover them, then microwave on high for about 3 minutes. Meanwhile, prepare a wok or low pan with your safflower oil and turn it on high heat. Once oil is hot, toss in your shrimp (with a little salt and pepper). Cook for approx. 2 minutes each side, until shrimp are pink and totally opaque. Toss veggies and shrimp into pot with the rice, stir it all together, and serve! The above recipe makes enough food to last me a solid 3 meals, sometimes 4 if I stretch it and add another serving of shrimp for the last meal. Serving Size: Makes almost 3 1-cup servings.
