1 small Red Onion
2 Cloves Garlic, sliced
2 Cups Beef Broth (College Inn Sirloin Bold Stock preferred)
1 tsp Kosher Salt
1 tsp Garlic Salt
16 Cherry Tomatoes, halved
1 tbs finely minced cilantro
1 Poblano Pepper, seeded and chopped
3 tbs Lemon Juice
Zest from 1 lemon (approximately 3 tsp)
12 slices of Avocado

Here is how you make Lemon and Pepper Kissed Shrimp and Brown Rice:

Add rice and stock to medium pot. Cover and bring to a boil over medium high heat. When stock comes to a rolling boil reduce heat to low and continue to cook until liquid is absorbed by rice. Approximately 45 minutes. Wash and thoroughly dry shrimpPeel and slice onion and cut into halvesCut celery into medium pieces on diagonal In a large skillet heat olive oil over medium high heat. Add celery, onion, garlic and poblano pepper. Saute until celery is bright green, about 4 minutes. Add shrimp. Stir continuously for approximately 2 minutes, Shrimp should be almost pink. Add lemon juice, zest, cilantro and tomatoes. Continue cooking and stirring until heated through, about another 2 minutes. Serve mixture over rice and top with 3 slices of avocado.
