Here is how you make Shrimp and Curried Rice:

Spray large skillet with Olive Oil pan spray. Over medium heat, add the oinion and carrots, stirring occasionally, add a bit of water if needed, cook until soft about 6-8 min.Add garlic and curry, cook 2 minutes, stirring.Add rice, 2 1/2 cups of water, bit of salt and pepper, bring to a boil. Reduce heat to medium-low, cover, and simmer about 30 minutes. Add the shrimp to the rice, stir, cover and cook until shrimp are opaque, about 5 minutes. Remove from heat, stir in basil, serve.
