Dice or slice onion and green pepper to desired sizeDrain water chestnuts (I used a can)Put all ingredients (except rice) into a large bowlCoat med/large pan with cooking spray (I use canola/olive)Once pan is warm, dump all ingredients (except rice) into pan.cook until veggies start to get tender, but still a bit crispPlace rice onto plate and spread evenly (I use 1 cup of the prepared rice from a rice cooker)Spoon or Ladle appx. 1/4 of stir fry onto bed of rice.Enjoy. *tastes excellent with a dash of Tabasco, but I have to add it separately since not everyone in my family likes it.Number of Servings: 4Recipe submitted by SparkPeople user SOLOVUS.
