Here is how you make Non-Dairy Low-Sodium Brown Rice Risotto:

Sautee the onion in olive oil until translucent. Add rice and stir over medium heat until it becomes opaque and slightly brown on the edges. Add chicken broth and stir. Keep simmering over medium heat. While simmering, add mushrooms, chopped garlic, and sausage. Keep simmering over medium heat until broth boils down to about the 50% level, then add enough water to cover the top of the rice. Stir and let boil down again. When liquid reaches about the 10% level, add parmesan cheese and stir.
