Stir, cover and cook on lowest setting 15 min. While rice is cooking, chop vegetables. Just before rice is finished, heat olive oil in 10-12 inch frying pan. Saute onion, bell pepper and celery until softened, but not browned. If more spicyness or heat is desired, Jalapeno peppers may also be added during saute.Once vegetables are ready, add rice to frying pan with an additional 1/2 cup water and spices/seasonings.
