I like this so much, I'll eat leftovers for breakfast (I don't even reheat it). We typically use it as the main course, or can be a side dish for any Mexican meal. I show 3 T of bacon grease in the ingredients list. I'm not exactly sure how much I use, I just add it for flavor. This used to be one of my favorites as a kid & one of the first main meal dishes I learned to cook.

1 can tomato sauce (8 oz)
1 can diced tomatoes (14.5 - 15 oz)
1 large onion chopped
1 green pepper chopped
1 lb of bacon cooked crispy
3 T bacon grease

Here is how you make Spanish Rice (DEFINITELY THE BEST):

Cook rice according to package directions. Cook bacon till crispy, pat grease from bacon & break into bite size pieces. Reserve bacon grease. Chop onion & green pepper. Saute onion & green pepper in bacon grease or olive oil (2 T). Add rest of ingredients & stir to combine & cook over low heat (be sure to rinse tomato cans with a little water & pour in). Season with salt & pepper.
